Pumpkin Spice Latte Cookies




INGREDIENTS:

  • 1 cup cold brewed Avenidas coffee (medium or dark roast)

  • 1/2 cup pumpkin purée

  • 2 1/2 - 3 cps flour

  • 1 tsp baking soda

  • 2 tsp pumpkin spice blend (nutmeg, cinnamon, allspice)

  • 1/2 tsp salt

  • 1/2 cup unsalted butter

  • 1 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla extract

DIRECTIONS:

  1. Prepare Avenidas cold brew night before

  2. Cream together butter and sugar

  3. Mix in the pumpkin, coffee, egg, and vanilla

  4. In another bowl, mix flour, baking soda, spices, and salt

  5. Slowly add flour mixture to butter mixture until combined

  6. Cover and chill for 1 hour

  7. Preheat oven to 350°F

  8. Line baking sheets with silicone or parchment paper

  9. Form dough into 2 in balls and place on sheets

  10. Bake 12-15 minutes until lightly browned

  11. Dust with pumpkin spice blend
